Training and Development
We know that Chefs want to be at the cutting edge of their trade. That’s why we’ve invested heavily in the development of our Chefs, to make sure we have industry leading training at the fingertips of all our kitchen colleagues, at all levels.
The development of the kitchen brigades is a key commitment within all of our properties and there are a range of Apprenticeship programmes to choose from to support this development. The right Apprenticeship programme for you will be dependent upon a combination of your existing knowledge and skills, the type of kitchen you work in and the nature of the menus you are expected to produce.

Chef de Partie Academy
This advanced culinary programme, lasting 12 – 18 months enables experienced chefs to take their knowledge
and skills to the next level. In addition to hands on culinary classes, there will also be visits to key
suppliers and demonstrations from a range of industry experts. The programme culminates in a visit to a
showcase kitchen where you will be challenged to create a three course meal for a panel of judges as part
of your graduation from the programme.

Commis Chef Academy
This wide ranging 12 month programme is designed for those who want to pursue a career in a professional kitchen.
Chefs will spend time in a class room environment as well as getting hands on experience learning how to prepare,
cook and serve amazing food. From basic chef skills through to preparing and cooking shellfish, our Commis
Chef Academy runs four times a year and is truly the launch pad to your culinary career.

Sous Chef Academy
The Sous Chef Academy has been created to help inspire and develop our future Head Chefs. The key focus is to learn the management skills needed to run a successful kitchen. We partner with Dale Carnegie to deliver a two day leadership programme before covering topics such as finance, HR and systems training as you get ready to lead your own brigade. Coupled with a host of enhanced culinary training, this is great preparation for the next step in your career journey.

Our kitchens really are fantastic and unique learning environments; you may be catering for a conference lunch of 900, an exclusive wedding, a leisure event for 300 or a bespoke 5 course private dinner for 24; the attention to detail is paramount to make every moment memorable.
